Let's continue the thread. Today I had rice with veggies, but didn't take any pics. Speaking of rice dishes, have you ever tried cooking them in an instant pot? It's a fantastic way to prepare flavorful meals quickly and easily. Instant pot recipes can be a game-changer for busy individuals who still want to enjoy delicious and nutritious homemade meals.

One instant pot recipe that comes to mind is a tasty vegetable biryani. Biryani is a fragrant rice dish that originated in the Indian subcontinent and is now enjoyed worldwide. With an instant pot, you can create a flavorful biryani in a fraction of the time it takes with traditional cooking methods.

To make an instant pot vegetable biryani, start by sautéing onions, garlic, and ginger in the pot. Then add your favorite mix of vegetables, such as carrots, peas, bell peppers, and cauliflower. Next, add aromatic spices like cumin, coriander, turmeric, and garam masala. Stir everything together, allowing the flavors to meld.

Once the vegetables are coated with the spices, add washed basmati rice and vegetable broth. Lock the instant pot lid and set it to the rice cooking function or manual mode. Cook the biryani for the recommended time, typically around 6-8 minutes, depending on the specific instructions for your instant pot model.
